The core question. Harvesting 10 days early or 10 days late can drop anethole by 8–12%, directly hitting export prices.
Two main harvest seasons
Lào Cai star anise yields two seasons: the summer season (July–September), 70% of output, and the winter season (November–December) for the rest.
Indicators of mature pods
- Petals turn uniform reddish-brown with no green streaks.
- Inner seed feels hard and dark, audible when shaken.
- Strong aroma when gently rubbed between palms.
“Experienced growers read the ‘eye of the anise’: when six of the eight petals are open and the seventh just starts to lift, oil is at its peak.”
— Master grower Vàng Seo Páo, Bắc Hà
Harvest method
- Cut peduncles with shears — never tear, to avoid branch damage.
- Harvest at first light after dew clears; avoid harsh midday sun.
- Use open-weave rattan or bamboo baskets, never plastic sacks.
Anethole comparison
GC-MS on 32 samples from the 2025 season shows: on-time harvest reached 87.2% anethole, 10-day early samples held only 78.8%, and 10-day late samples 79.5%.
